- 4 pieces Chicken Breast
- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 4 medium Potatoes
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- 2 tablespoons Fresh Parsley
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture all over the chicken breasts.
- Place the chicken breasts on a baking sheet lined with parchment paper.
- Wash and chop the potatoes into bite-sized pieces. In a bowl, toss the potatoes with olive oil, oregano, thyme, and salt.
- Spread the potatoes around the chicken breasts on the baking sheet.
- Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and tender.
- Garnish with fresh parsley before serving.
Notes
- For extra juiciness, marinate the chicken in the seasoning for at least 30 minutes before baking.
