  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 4 medium Potatoes
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • 2 tablespoons Fresh Parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture all over the chicken breasts.
  3. Place the chicken breasts on a baking sheet lined with parchment paper.
  4. Wash and chop the potatoes into bite-sized pieces. In a bowl, toss the potatoes with olive oil, oregano, thyme, and salt.
  5. Spread the potatoes around the chicken breasts on the baking sheet.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are golden and tender.
  7. Garnish with fresh parsley before serving.
