- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar (for strawberries)
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for cream)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine flour, granulated sugar, baking powder, and salt. Mix well.
- Add the softened butter, milk, and 1 teaspoon of vanilla extract to the dry ingredients. Beat on medium speed until well combined and smooth.
- Pour the batter evenly into the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- While the cakes are cooling, prepare the strawberries. In a medium bowl, combine sliced strawberries and 1/4 cup of sugar. Toss to coat and let sit for about 15 minutes to release juices.
- In a separate bowl, whip the heavy cream, powdered sugar, and 1 teaspoon of vanilla extract until stiff peaks form.
- Once the cakes are completely cool, place one layer on a serving plate. Top with half of the strawberries and a layer of whipped cream.
- Place the second cake layer on top and repeat with the remaining strawberries and whipped cream.
- Serve immediately and enjoy your perfect strawberry shortcake!
Notes
- For extra flavor, you can add a splash of lemon juice to the strawberries.
- This dessert is best enjoyed fresh, but you can store leftovers in the refrigerator for up to 2 days.
