  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 can (15 oz) pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Then mix in the pumpkin puree and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  9. Once cooled, frost with cream cheese frosting and serve.

Notes

  • For a richer flavor, add a pinch of cloves or allspice to the dry ingredients.
