- 4 Bone-in chicken thighs (skin-on for extra flavor)
- 1 teaspoon Salt (to taste)
- 1/2 teaspoon Black pepper (to taste)
- 2 tablespoons Olive oil (for sautéing)
- 1 cup Chicken broth (low-sodium recommended)
- 4 Garlic cloves (minced)
- 4 tablespoons Butter (for mashed potatoes)
- 1/2 cup Milk (for mashed potatoes)
- 2 pounds Potatoes (peeled and cubed)
- to taste Fresh parsley (for garnish)
Instructions
- Start by seasoning the bone-in chicken thighs with salt and black pepper on both sides.
- Set the Instant Pot to ‘Sauté’ mode and heat olive oil. Once hot, add the chicken thighs skin-side down and sear for about 5 minutes until golden brown. Flip and sear the other side for 3 minutes.
- Remove the chicken from the pot and set aside. Add minced garlic and sauté for 30 seconds until fragrant.
- Pour the chicken broth into the pot, scraping the bottom to deglaze. Return the chicken thighs to the pot.
- Close the lid, set the pressure valve to sealing, and cook on ‘Manual’ or ‘Pressure Cook’ for 15 minutes. Allow for a natural release for 10 minutes, then quick release any remaining pressure.
- While the chicken is cooking, prepare the mashed potatoes. Place cubed potatoes in a pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to the pot.
- Add butter and milk to the potatoes, and mash until creamy. Season with salt to taste.
- Serve the chicken thighs over a bed of buttery mashed potatoes, garnished with fresh parsley.
Notes
- For extra flavor, marinate the chicken thighs in spices or herbs the night before.
- Feel free to add vegetables like carrots or green beans to the Instant Pot for a complete meal.
