Ingredients

  • 4 Bone-in chicken thighs (skin-on for extra flavor)
  • 1 teaspoon Salt (to taste)
  • 1/2 teaspoon Black pepper (to taste)
  • 2 tablespoons Olive oil (for sautéing)
  • 1 cup Chicken broth (low-sodium recommended)
  • 4 Garlic cloves (minced)
  • 4 tablespoons Butter (for mashed potatoes)
  • 1/2 cup Milk (for mashed potatoes)
  • 2 pounds Potatoes (peeled and cubed)
  • to taste Fresh parsley (for garnish)

Instructions

  1. Start by seasoning the bone-in chicken thighs with salt and black pepper on both sides.
  2. Set the Instant Pot to ‘Sauté’ mode and heat olive oil. Once hot, add the chicken thighs skin-side down and sear for about 5 minutes until golden brown. Flip and sear the other side for 3 minutes.
  3. Remove the chicken from the pot and set aside. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Pour the chicken broth into the pot, scraping the bottom to deglaze. Return the chicken thighs to the pot.
  5. Close the lid, set the pressure valve to sealing, and cook on ‘Manual’ or ‘Pressure Cook’ for 15 minutes. Allow for a natural release for 10 minutes, then quick release any remaining pressure.
  6. While the chicken is cooking, prepare the mashed potatoes. Place cubed potatoes in a pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes. Drain and return to the pot.
  7. Add butter and milk to the potatoes, and mash until creamy. Season with salt to taste.
  8. Serve the chicken thighs over a bed of buttery mashed potatoes, garnished with fresh parsley.

Notes

  • For extra flavor, marinate the chicken thighs in spices or herbs the night before.
  • Feel free to add vegetables like carrots or green beans to the Instant Pot for a complete meal.
