Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the chocolate chips.
- Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden but the centers are still soft.
- Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, scoop a generous amount of ice cream onto the flat side of one cookie, then top with another cookie, pressing down gently.
- Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
Notes
- Feel free to customize the ice cream flavor to your preference.
