- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil

Instructions
- Place the flour on a clean surface or in a large mixing bowl. Make a well in the center.
- Crack the eggs into the well, and add the salt and olive oil.
- Using a fork, gently beat the eggs, gradually incorporating the flour from the edges of the well until a dough begins to form.
- Knead the dough with your hands for about 8-10 minutes until it is smooth and elastic. If the dough is too dry, add a small amount of water; if too sticky, sprinkle with a little more flour.
- Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
- After resting, divide the dough into 4 pieces. Keep the pieces you are not currently using covered to prevent them from drying out.
- Roll out one piece of dough at a time using a pasta machine or a rolling pin, to your desired thickness (about 1/16 inch is ideal for lasagna).
- Cut the rolled-out dough into sheets that will fit your lasagna dish, trimming the edges as necessary.
- Repeat with remaining pieces of dough.
- Cook the noodles in salted boiling water for about 2-3 minutes if you prefer them par-cooked, or layer them directly into your lasagna if you prefer no-cook noodles.
Notes
- For flavored noodles, consider adding spinach or beet puree to the dough.
- Make sure to dust the noodles with flour to prevent them from sticking together.
- Fresh noodles can be stored in the refrigerator for a few days or frozen for later use.
