Instructions

  1. Place the flour on a clean surface or in a large mixing bowl. Make a well in the center.
  2. Crack the eggs into the well, and add the salt and olive oil.
  3. Using a fork, gently beat the eggs, gradually incorporating the flour from the edges of the well until a dough begins to form.
  4. Knead the dough with your hands for about 8-10 minutes until it is smooth and elastic. If the dough is too dry, add a small amount of water; if too sticky, sprinkle with a little more flour.
  5. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  6. After resting, divide the dough into 4 pieces. Keep the pieces you are not currently using covered to prevent them from drying out.
  7. Roll out one piece of dough at a time using a pasta machine or a rolling pin, to your desired thickness (about 1/16 inch is ideal for lasagna).
  8. Cut the rolled-out dough into sheets that will fit your lasagna dish, trimming the edges as necessary.
  9. Repeat with remaining pieces of dough.
  10. Cook the noodles in salted boiling water for about 2-3 minutes if you prefer them par-cooked, or layer them directly into your lasagna if you prefer no-cook noodles.

Notes

  • For flavored noodles, consider adding spinach or beet puree to the dough.
  • Make sure to dust the noodles with flour to prevent them from sticking together.
  • Fresh noodles can be stored in the refrigerator for a few days or frozen for later use.
