Ingredients

  • 4 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 packet pectin (1.75 oz)
  • 1/2 teaspoon butter (optional, to reduce foaming)

Instructions

  1. In a large bowl, mash the strawberries with a potato masher until desired consistency is reached.
  2. In a large pot, combine the mashed strawberries, sugar, lemon juice, and pectin. Stir well to combine.
  3. Bring the mixture to a boil over medium-high heat, stirring frequently.
  4. Once boiling, continue to cook for 1-2 minutes or until the mixture thickens. If using, stir in butter to reduce foam.
  5. Remove from heat and ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
  6. Seal the jars with lids and process in a water bath for 10 minutes to ensure a proper seal.
  7. Let the jars cool completely at room temperature before storing in the refrigerator or pantry.
