Ingredients
Scale
- 2 pounds fresh strawberries, hulled and sliced
- 4 cups granulated sugar
- 1/4 cup lemon juice
- 1 packet pectin (1.75 oz)
- 1/2 teaspoon butter (optional, to reduce foaming)
Instructions
- In a large bowl, mash the strawberries with a potato masher until desired consistency is reached.
- In a large pot, combine the mashed strawberries, sugar, lemon juice, and pectin. Stir well to combine.
- Bring the mixture to a boil over medium-high heat, stirring frequently.
- Once boiling, continue to cook for 1-2 minutes or until the mixture thickens. If using, stir in butter to reduce foam.
- Remove from heat and ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
- Seal the jars with lids and process in a water bath for 10 minutes to ensure a proper seal.
- Let the jars cool completely at room temperature before storing in the refrigerator or pantry.
Notes
- Ensure strawberries are ripe for the best flavor.
- You can adjust the sugar to taste depending on how sweet your strawberries are.
- Store opened jars in the refrigerator and consume within a few weeks.
