Ingredients

  • 4 large russet potatoes
  • Vegetable oil for frying

Instructions

  1. Wash and peel the potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes thinly (about 1/8 inch thick).
  2. Soak the potato slices in cold water for at least 30 minutes to remove excess starch.
  3. Drain the potato slices and pat them dry with a clean kitchen towel.
  4. In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).
  5. Add a small batch of potato slices to the hot oil, making sure not to overcrowd the pot.
  6. Fry the potato slices until they are golden brown and crispy, about 3-5 minutes.
  7. Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain excess oil.
  8. While still hot, sprinkle with salt and any desired seasonings.
  9. Repeat the frying process with the remaining potato slices.
  10. Allow the chips to cool completely before serving. Enjoy!
