This recipe for homemade pasta lasagna noodles will elevate your lasagna to new heights. Silky smooth and incredibly soft, these noodles are worth the effort for a truly delicious dish.

- 2 cups all-purpose flour, plus more for dusting
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil (optional)
- Water, as needed
Instructions
- On a clean surface, form the flour into a mound and create a well in the center. Add the eggs, salt, and olive oil into the well.
- Using a fork, beat the eggs gently, gradually incorporating the flour from the edges of the well until a rough dough forms.
- Knead the dough by hand for about 8-10 minutes until it is smooth and elastic. If the dough is too dry, add a little water; if it’s too sticky, sprinkle with more flour.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
- After resting, divide the dough into four pieces. Roll out each piece using a pasta machine or a rolling pin until thin (about 1/16 inch thick). Dust with flour to prevent sticking.
- Cut the rolled-out pasta into sheets to fit your lasagna pan. Dust the sheets with a bit of flour to keep them separated.
- Once all sheets are cut, cook them in salted boiling water for 1-2 minutes until al dente, then drain and lay flat on a clean kitchen towel.
Notes
- For a richer flavor, you can use semolina flour in place of some of the all-purpose flour.
- Ensure the dough is well-kneaded for the best texture.
- You can also make the pasta ahead of time and store it in the refrigerator or freezer.
