Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Water as needed

Instructions

  1. On a clean surface, make a mound with the flour and create a well in the center.
  2. Add the eggs, salt, and olive oil into the well.
  3. Using a fork, gradually incorporate the flour into the eggs until a dough starts to form.
  4. Knead the dough for about 8-10 minutes until smooth and elastic. If the dough is too dry, add water a teaspoon at a time.
  5. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  6. After resting, divide the dough into 4 pieces.
  7. Roll out each piece using a pasta machine or a rolling pin until thin, about 1/16 inch thick.
  8. Cut the rolled dough into sheets that fit your lasagna pan.
  9. Cook the noodles in boiling salted water for 2-3 minutes until al dente, then drain and lay flat on parchment paper.

Notes

  • Make sure to flour your surface well to prevent sticking while rolling out the dough.
  • You can store the uncooked noodles in the refrigerator for a few days or freeze them for longer storage.
  • For added flavor, consider incorporating herbs into the dough.
