Instructions

  1. In a bowl, combine the sliced onion with a pinch of salt and let it sit for about 10 minutes to draw out moisture.
  2. In a separate pot, combine the vegetable oil, white vinegar, black peppercorns, and bay leaves. Heat gently on low to infuse the flavors, but do not boil.
  3. Once the oil mixture is warm, remove it from heat and allow it to cool slightly.
  4. In a glass jar or container, layer the herring fillets and the salted onions. Pour the infused oil mixture over the top, ensuring the herring is fully submerged.
