Ingredients

  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried oregano
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. In a small bowl, mix together the olive oil, salt, pepper, garlic powder, onion powder, thyme, rosemary, and oregano to create a herb paste.
  4. Rub the herb paste all over the chicken, including under the skin and inside the cavity.
  5. Stuff the cavity with the halved lemon and crushed garlic cloves.
  6. Tie the legs together with kitchen twine and tuck the wing tips under the body.
  7. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for 10-15 minutes before carving.
  9. Garnish with fresh herbs if desired and serve.
