Ingredients

  • 1 cup honey
  • 2 cups water
  • 1/4 cup fresh lemon juice
  • 1 tablespoon gelatin powder
  • 1/4 cup cold water (for gelatin)
  • Fresh fruit pieces for garnish (optional)

Instructions

  1. In a small bowl, sprinkle the gelatin powder over 1/4 cup of cold water. Let it sit for about 5 minutes to bloom.
  2. In a saucepan, combine honey, 2 cups of water, and lemon juice. Heat over medium heat until the honey dissolves completely.
  3. Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
  4. Pour the mixture into a mold or an ice cube tray. If using fruit pieces, add them to the mixture now.
  5. Cover and freeze for at least 4 hours or until solid.
  6. To serve, remove from the mold and let sit at room temperature for a few minutes to soften slightly. Cut into desired shapes or serve as is.

Notes

  • You can adjust the sweetness by adding more or less honey to your taste.
  • Try using different fruit juices instead of lemon for varied flavors.
  • Store any leftovers in an airtight container in the freezer.
