A refreshing and easy-to-make frozen treat that’s perfect for hot days!
Ingredients

- 1 cup honey
- 2 cups water
- 1/4 cup fresh lemon juice
- 1 tablespoon gelatin powder
- 1/4 cup cold water (for gelatin)
- Fresh fruit pieces for garnish (optional)
Instructions
- In a small bowl, sprinkle the gelatin powder over 1/4 cup of cold water. Let it sit for about 5 minutes to bloom.
- In a saucepan, combine honey, 2 cups of water, and lemon juice. Heat over medium heat until the honey dissolves completely.
- Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
- Pour the mixture into a mold or an ice cube tray. If using fruit pieces, add them to the mixture now.
- Cover and freeze for at least 4 hours or until solid.
- To serve, remove from the mold and let sit at room temperature for a few minutes to soften slightly. Cut into desired shapes or serve as is.
Notes
- You can adjust the sweetness by adding more or less honey to your taste.
- Try using different fruit juices instead of lemon for varied flavors.
- Store any leftovers in an airtight container in the freezer.
