Description
A classic French onion soup topped with golden, cheesy croutons, perfect for warming up on a chilly day.

- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1/4 cup dry white wine
- 6 cups beef or vegetable broth
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup grated Gruyère cheese
- 4 slices of French bread
Instructions
- In a large pot, melt the butter and olive oil over medium heat.
- Add the onions and sugar, and cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.
- Pour in the white wine and cook for another 5 minutes, scraping any browned bits from the bottom of the pot.
- Add the broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 20 minutes.
- Preheat the oven to 400°F (200°C).
- Place the French bread slices on a baking sheet and toast in the oven for about 5-7 minutes until golden.
- Remove the bay leaf and thyme sprigs from the soup.
- Ladle the soup into oven-safe bowls, top with toasted bread slices, and sprinkle with Gruyère cheese.
- Place the bowls on a baking sheet and bake in the oven for 10-15 minutes until the cheese is bubbly and golden.
Notes
- For extra flavor, add a splash of sherry or brandy after the wine.
- You can also use a mix of cheeses, such as mozzarella or parmesan, for a different taste.
- Store leftover soup in the refrigerator for up to 3 days.
