Description

Ingredients

  • 4 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/4 cup dry white wine
  • 6 cups beef or vegetable broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup grated Gruyère cheese
  • 4 slices of French bread

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the onions and sugar, and cook, stirring occasionally, until the onions are caramelized and golden brown, about 25-30 minutes.
  3. Pour in the white wine and cook for another 5 minutes, scraping any browned bits from the bottom of the pot.
  4. Add the broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for 20 minutes.
  5. Preheat the oven to 400°F (200°C).
  6. Place the French bread slices on a baking sheet and toast in the oven for about 5-7 minutes until golden.
  7. Remove the bay leaf and thyme sprigs from the soup.
  8. Ladle the soup into oven-safe bowls, top with toasted bread slices, and sprinkle with Gruyère cheese.
  9. Place the bowls on a baking sheet and bake in the oven for 10-15 minutes until the cheese is bubbly and golden.

Notes

  • For extra flavor, add a splash of sherry or brandy after the wine.
  • You can also use a mix of cheeses, such as mozzarella or parmesan, for a different taste.
  • Store leftover soup in the refrigerator for up to 3 days.
