  • 4 large onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1/2 cup dry white wine
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 baguette, sliced into 1-inch pieces
  • 2 cups shredded Gruyère cheese
  • Freshly ground black pepper, to taste

Instructions

  1. In a large pot, melt the butter with the olive oil over medium heat. Add the sliced onions and salt, and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.
  2. Stir in the sugar and continue cooking for another 5 minutes to enhance the caramelization.
  3. Add the white wine and scrape any browned bits from the bottom of the pot. Allow the wine to reduce for about 5 minutes.
  4. Pour in the beef broth and add the thyme. Bring the soup to a simmer and let it cook for an additional 20-30 minutes. Season with freshly ground black pepper to taste.
  5. Meanwhile, preheat the oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven until lightly golden, about 10 minutes.
  6. To serve, ladle the hot soup into oven-safe bowls. Place a slice or two of toasted baguette on top of each bowl and generously sprinkle with Gruyère cheese.
  7. Place the bowls on a baking sheet and broil in the oven until the cheese is bubbly and golden brown, about 3-5 minutes. Watch closely to avoid burning.
  8. Serve immediately and enjoy!
