Description
This classic French Dip Sandwich features thinly sliced roast beef piled high on a crusty roll, served with a side of rich au jus for dipping. It’s an easy and satisfying meal perfect for any occasion.

- 2 pounds beef roast (such as ribeye or sirloin)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 4 hoagie rolls or French baguette, sliced
- Provolone cheese, optional
Instructions
- Preheat your oven to 325°F (165°C).
- Season the beef roast generously with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Remove the roast from the skillet and set aside. In the same skillet, add sliced onions and cook until softened, about 5 minutes. Add minced garlic and cook until fragrant, about 1 minute.
- Return the roast to the skillet and add beef broth, water, Worcestershire sauce, and dried thyme. Bring to a simmer.
- Cover the skillet with a lid or foil and transfer to the preheated oven. Roast for 2-3 hours, or until the beef is tender and easily shredded.
- Remove the roast from the skillet and let it rest for 10-15 minutes before slicing thinly against the grain.
- Meanwhile, strain the au jus and keep it warm.
- To assemble the sandwiches, fill each hoagie roll with sliced beef and top with provolone cheese, if using. Serve with warm au jus on the side for dipping.
Notes
- For extra flavor, you can marinate the beef roast in your favorite spices overnight.
- Serve with pickles or horseradish for an added kick.
- Leftover au jus can be stored in the refrigerator for up to a week.
