Ingredients

  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 4 hoagie rolls or French baguette, sliced
  • Provolone cheese, optional

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Season the beef roast generously with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  4. Remove the roast from the skillet and set aside. In the same skillet, add sliced onions and cook until softened, about 5 minutes. Add minced garlic and cook until fragrant, about 1 minute.
  5. Return the roast to the skillet and add beef broth, water, Worcestershire sauce, and dried thyme. Bring to a simmer.
  6. Cover the skillet with a lid or foil and transfer to the preheated oven. Roast for 2-3 hours, or until the beef is tender and easily shredded.
  7. Remove the roast from the skillet and let it rest for 10-15 minutes before slicing thinly against the grain.
  8. Meanwhile, strain the au jus and keep it warm.
  9. To assemble the sandwiches, fill each hoagie roll with sliced beef and top with provolone cheese, if using. Serve with warm au jus on the side for dipping.

  • For extra flavor, you can marinate the beef roast in your favorite spices overnight.
