- 2 cups all-purpose flour
- 1 large egg
- 1/2 cup water
- 1/2 teaspoon salt
- 2 medium potatoes, peeled and cubed
- 1 cup cooked fish (cod or salmon recommended)
- 1 small onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
- Sour cream for serving
- Chopped chives for garnish (optional)
Instructions
- In a large bowl, mix flour and salt. Create a well in the center and add the egg and water. Mix until a dough forms, then knead on a floured surface for about 5 minutes until smooth. Cover and let rest for 30 minutes.
- Boil potatoes in salted water until tender, about 15 minutes. Drain and mash. In a skillet, melt butter over medium heat, add onions, and sauté until golden. Combine mashed potatoes, fish, and sautéed onions in a bowl. Season with salt and pepper.
- Roll out the dough on a floured surface to about 1/8 inch thick. Cut circles using a round cookie cutter or glass. Spoon a small amount of filling onto each circle, fold over, and pinch edges to seal tightly.
- Bring a large pot of salted water to a boil. Drop pierogi in batches and cook until they float to the surface, about 3-4 minutes. Remove with a slotted spoon.
- Serve warm with sour cream and garnish with chives if desired.
Notes
- For extra flavor, you can add herbs like dill or parsley to the filling.
- Pierogi can be frozen before cooking. Just place them in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag.
