  • Author: ushinzomr

Description

Elote, or Mexican street corn, is a delicious and flavorful dish made with grilled corn on the cob, coated in a creamy mixture of mayonnaise, cheese, lime juice, and spices. Perfect as a summer side dish or snack!

Ingredients

Scale
  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through.
  3. In a bowl, mix together the mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper until well combined.
  4. Once the corn is grilled, remove it from the heat and brush the mayonnaise mixture all over the corn.
  5. Sprinkle the crumbled cotija cheese over the coated corn, ensuring it’s well covered.
  6. Garnish with chopped cilantro if desired and serve immediately.

Notes

  • For a spicier kick, add more chili powder or sprinkle with cayenne pepper.
  • You can also use feta cheese as a substitute for cotija cheese.
  • Elote is best enjoyed fresh off the grill!
