Description
Elote, or Mexican street corn, is a delicious and flavorful dish made with grilled corn on the cob, coated in a creamy mixture of mayonnaise, cheese, lime juice, and spices. Perfect as a summer side dish or snack!

- 4 ears of corn, husked
- 1/2 cup mayonnaise
- 1/2 cup crumbled cotija cheese
- 1 lime, juiced
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your grill to medium-high heat.
- Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through.
- In a bowl, mix together the mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper until well combined.
- Once the corn is grilled, remove it from the heat and brush the mayonnaise mixture all over the corn.
- Sprinkle the crumbled cotija cheese over the coated corn, ensuring it’s well covered.
- Garnish with chopped cilantro if desired and serve immediately.
Notes
- For a spicier kick, add more chili powder or sprinkle with cayenne pepper.
- You can also use feta cheese as a substitute for cotija cheese.
- Elote is best enjoyed fresh off the grill!
