Ingredients

  • 1 pound chicken breasts
  • 1/2 cup teriyaki sauce
  • 1 cup sticky rice
  • 1 1/2 cups water
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 tablespoons sesame seeds

  • to taste pepper

Instructions

  1. Cook the sticky rice according to package instructions, using water in a saucepan.
  2. While the rice is cooking, heat a skillet over medium-high heat and add the chicken breasts.
  3. Cook the chicken for about 5-7 minutes on each side until cooked through and golden brown.
  4. Pour the teriyaki sauce over the chicken and simmer for an additional 3-5 minutes, allowing the sauce to thicken slightly.
  5. In another pan, toss the broccoli florets with olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for about 15-20 minutes until tender and slightly crisp.
  6. Serve the teriyaki chicken over the sticky rice, topped with sesame seeds and alongside the roasted broccoli.

Notes

  • For a homemade teriyaki sauce, combine soy sauce, honey, garlic, and ginger.
  • Feel free to add other vegetables like carrots or bell peppers to the roasted broccoli.
