Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • 1 avocado, diced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, combine olive oil, garlic powder, onion powder, salt, and pepper. Rub this mixture all over the chicken breasts.
  3. Grill the chicken for 6-7 minutes on each side or until cooked through and juices run clear.
  4. While the chicken is cooking, in a separate bowl, mix together cherry tomatoes, corn, avocado, lime juice, and cilantro. Season with salt and pepper to taste.
  5. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
  6. Serve the sliced chicken topped with the fresh tomato and corn salsa.
