- 4 lbs of boneless chicken breasts
- 2 cups of barbecue sauce
- 1 cup of diced bell peppers
- 1 cup of diced onions
- 2 cups of shredded cheese (cheddar or mozzarella)
- 12 burger buns
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Preheat your grill to medium heat.
- Season the chicken breasts with salt and pepper. Drizzle with olive oil and place them on the grill.
- Grill the chicken for about 6-7 minutes per side, or until cooked through (internal temperature should reach 165°F).
- In a separate bowl, mix the barbecue sauce with the diced bell peppers and onions.
- Once the chicken is cooked, remove it from the grill and shred it using two forks.
- In a large mixing bowl, combine the shredded chicken with the barbecue sauce mixture until well coated.
- Return the mixture to the grill for an additional 5 minutes to heat through.
- Place the mixture on burger buns and top with shredded cheese.
- Serve hot and enjoy!
