Ingredients

  • 4 lbs of boneless chicken breasts
  • 2 cups of barbecue sauce
  • 1 cup of diced bell peppers
  • 1 cup of diced onions
  • 2 cups of shredded cheese (cheddar or mozzarella)
  • 12 burger buns
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions

  1. Preheat your grill to medium heat.
  2. Season the chicken breasts with salt and pepper. Drizzle with olive oil and place them on the grill.
  3. Grill the chicken for about 6-7 minutes per side, or until cooked through (internal temperature should reach 165°F).
  4. In a separate bowl, mix the barbecue sauce with the diced bell peppers and onions.
  5. Once the chicken is cooked, remove it from the grill and shred it using two forks.
  6. In a large mixing bowl, combine the shredded chicken with the barbecue sauce mixture until well coated.
  7. Return the mixture to the grill for an additional 5 minutes to heat through.
  8. Place the mixture on burger buns and top with shredded cheese.
