Description

This low-carb and totally satisfying cabbage lasagna is perfect for those on a keto diet. It’s easy to make and packed with flavor!


Ingredients

  • 1 large head of cabbage, leaves separated
  • 1 lb ground beef or sausage
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce (sugar-free)
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large pot, bring water to a boil. Add cabbage leaves and boil for 2-3 minutes until softened. Remove and set aside.
  3. In a skillet, heat olive oil over medium heat. Add ground beef or sausage, cooking until browned. Drain excess fat.
  4. In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and pepper until combined.
  5. Spread a thin layer of marinara sauce in the bottom of a baking dish.
  6. Layer cabbage leaves, followed by the ricotta mixture, ground meat, marinara sauce, and mozzarella cheese. Repeat layers until all ingredients are used, finishing with mozzarella on top.
  7. Sprinkle grated Parmesan cheese over the top layer.
  8. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  9. Let cool for a few minutes before slicing and serving.
