- 2 pounds boneless, skinless chicken breasts
- 1 cup BBQ sauce (your favorite brand)
- 1/2 cup chicken broth or water
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cooked rice or hamburger buns for serving
Instructions
- Start by seasoning the chicken breasts with garlic powder, onion powder, salt, and pepper.
- Set your Instant Pot to the sauté mode and add olive oil. Once hot, add the seasoned chicken breasts and sear for 2-3 minutes on each side until browned.
- Remove the chicken from the pot and set aside. Pour in the chicken broth or water and scrape the bottom of the pot to deglaze.
- Return the chicken to the pot and pour the BBQ sauce over the top.
- Close the lid, set the valve to sealing, and cook on high pressure for 10 minutes.
- Once the cooking time is complete, allow the pressure to release naturally for 5 minutes, then perform a quick release for any remaining pressure.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and mix well with the BBQ sauce.
- Serve the BBQ chicken over cooked rice or on hamburger buns.
Notes
- For extra flavor, you can add chopped onions or bell peppers while sautéing the chicken.
- Feel free to adjust the amount of BBQ sauce to your preference for a saucier or less saucy dish.
- This recipe can easily be doubled in a larger Instant Pot.
