Instructions

  1. In a large skillet over medium-high heat, add the vegetable oil. Once hot, add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Add soy sauce and stir to coat the chicken. Remove from skillet and set aside.
  2. In the same skillet, melt the butter. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add the cooked rice to the skillet, breaking apart any clumps. Stir well to combine with the garlic and butter.
  4. Push the rice to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them into the rice.
  5. Add the frozen peas and carrots, onion powder, garlic powder, salt, and pepper to the rice. Stir to combine and cook for another 2-3 minutes until heated through.
  6. Serve the hibachi chicken over the fried rice.
  7. To make the yum yum sauce, in a small bowl, whisk together mayonnaise, ketchup, sugar, water, and paprika until smooth.
  8. Drizzle the yum yum sauce over the chicken and fried rice before serving.

Notes

  • For extra flavor, marinate the chicken in soy sauce for 30 minutes before cooking.
  • Feel free to add other vegetables such as bell peppers or onions to the fried rice.
  • You can use brown rice or cauliflower rice as a healthier alternative.
