Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the white kidney beans, corn, green chilies, diced onion, minced garlic, cumin, chili powder, salt, pepper, and chicken broth on top of the chicken.
  3. Cover and cook on low for 4 hours or on high for 2 hours.
  4. After cooking, remove the chicken and shred it using two forks. Return the shredded chicken to the crockpot.
  5. Stir in the sour cream until well combined.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

  • For a spicier chili, add diced jalapeños or a pinch of cayenne pepper.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
