- 1 pound boneless, skinless chicken breasts
- 1 can (15 oz) white kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the white kidney beans, corn, green chilies, diced onion, minced garlic, cumin, chili powder, salt, pepper, and chicken broth on top of the chicken.
- Cover and cook on low for 4 hours or on high for 2 hours.
- After cooking, remove the chicken and shred it using two forks. Return the shredded chicken to the crockpot.
- Stir in the sour cream until well combined.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
- For a spicier chili, add diced jalapeños or a pinch of cayenne pepper.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
