Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups white rice
  • 4 cups water
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the chicken breasts in the crockpot.
  2. In a mixing bowl, combine the chicken broth, ranch seasoning mix, garlic powder, onion powder, salt, and pepper. Pour the mixture over the chicken breasts.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Once cooked, shred the chicken in the crockpot using two forks, mixing it with the sauce.
  5. While the chicken is cooking, rinse the white rice under cold water until the water runs clear.
  6. In a medium saucepan, bring 4 cups of water to a boil. Add the rinsed rice and a pinch of salt. Stir, then reduce the heat to low and cover.
  7. Cook the rice for about 18-20 minutes, or until all the water is absorbed and the rice is fluffy.
  8. Serve the shredded chicken over the fluffy white rice. Garnish with fresh parsley if desired.
