Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 packet ranch seasoning mix
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups white rice
- 4 cups water
- Fresh parsley for garnish (optional)
Instructions
- Place the chicken breasts in the crockpot.
- In a mixing bowl, combine the chicken broth, ranch seasoning mix, garlic powder, onion powder, salt, and pepper. Pour the mixture over the chicken breasts.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken in the crockpot using two forks, mixing it with the sauce.
- While the chicken is cooking, rinse the white rice under cold water until the water runs clear.
- In a medium saucepan, bring 4 cups of water to a boil. Add the rinsed rice and a pinch of salt. Stir, then reduce the heat to low and cover.
- Cook the rice for about 18-20 minutes, or until all the water is absorbed and the rice is fluffy.
- Serve the shredded chicken over the fluffy white rice. Garnish with fresh parsley if desired.
Notes
- For extra flavor, add vegetables like carrots or bell peppers to the crockpot.
- You can substitute chicken broth with low-sodium chicken broth for a healthier option.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
