- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 1 cup milk
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are tender, about 5 minutes.
- Add the garlic, thyme, and oregano, and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a simmer. Add the shredded chicken and frozen peas, and cook for 5 minutes.
- In a mixing bowl, combine the flour, baking powder, salt, and pepper. Stir in the milk until just combined.
- Drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot and cook for 10 minutes without lifting the lid.
- After 10 minutes, check the dumplings for doneness — they should be fluffy and cooked through.
- Serve the soup hot, garnished with fresh parsley.
