  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are tender, about 5 minutes.
  2. Add the garlic, thyme, and oregano, and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring to a simmer. Add the shredded chicken and frozen peas, and cook for 5 minutes.
  4. In a mixing bowl, combine the flour, baking powder, salt, and pepper. Stir in the milk until just combined.
  5. Drop spoonfuls of the dumpling batter into the simmering soup. Cover the pot and cook for 10 minutes without lifting the lid.
  6. After 10 minutes, check the dumplings for doneness — they should be fluffy and cooked through.
  7. Serve the soup hot, garnished with fresh parsley.
