- 1 avocado, sliced
- 1/2 cup sour cream
Instructions
- In a large skillet over medium heat, cook the ground beef or turkey until browned.
- Add the black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and cook for another 5-7 minutes until heated through.
- While the mixture is cooking, warm the tortillas in a separate pan or microwave.
- To assemble, spoon the beef mixture onto each tortilla, then top with shredded cheese, diced tomatoes, avocado, and a dollop of sour cream.
- Serve immediately and enjoy your easy summer meal!
