Ingredients

- 1 cup of uncooked pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, fresh
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the spinach, salt, black pepper, and red pepper flakes. Cook for another 2 minutes until the spinach is wilted.
- Add the cooked pasta to the skillet and toss everything together. Cook for an additional minute to heat through.
- Remove from heat and stir in the grated Parmesan cheese until melted and combined.
- Serve immediately, garnished with fresh basil.
Notes
- Feel free to substitute any vegetables you have on hand.
- For added protein, consider adding cooked chicken or shrimp.
