Ingredients

  • 1 cup of uncooked pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Stir in the spinach, salt, black pepper, and red pepper flakes. Cook for another 2 minutes until the spinach is wilted.
  5. Add the cooked pasta to the skillet and toss everything together. Cook for an additional minute to heat through.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and combined.
  7. Serve immediately, garnished with fresh basil.
