This quick and easy meal combines flavorful canned salmon with perfectly crispy air fryer potatoes for a delicious dinner option.


Ingredients

  • 2 cans Canned Salmon
  • 1 cup Breadcrumbs
  • 2 Eggs
  • 1/4 cup Green Onions
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 4 medium Potatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Paprika

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix the drained canned salmon, chopped green onions, lemon juice, salt, and black pepper.
  3. Form the salmon mixture into patties and dip each patty into the beaten eggs and then coat with breadcrumbs if using.
  4. In another bowl, toss the potato wedges with olive oil, paprika, salt, and pepper until evenly coated.
  5. Place the potato wedges in the air fryer basket and cook for 15-20 minutes, shaking the basket halfway through, until golden and crispy.
  6. While the potatoes are cooking, place the salmon patties in the air fryer and cook for 8-10 minutes, flipping halfway through, until cooked through and crispy.
  7. Serve the salmon patties with the crispy air fryer potatoes.

Notes

  • Feel free to add herbs or spices to the salmon mixture for extra flavor.
  • You can also bake the salmon patties in the oven at 375°F (190°C) for about 15-20 minutes if you don’t have an air fryer.
