This quick and easy meal combines flavorful canned salmon with perfectly crispy air fryer potatoes for a delicious dinner option.

- 2 cans Canned Salmon
- 1 cup Breadcrumbs
- 2 Eggs
- 1/4 cup Green Onions
- 2 tablespoons Lemon Juice
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 4 medium Potatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Paprika
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix the drained canned salmon, chopped green onions, lemon juice, salt, and black pepper.
- Form the salmon mixture into patties and dip each patty into the beaten eggs and then coat with breadcrumbs if using.
- In another bowl, toss the potato wedges with olive oil, paprika, salt, and pepper until evenly coated.
- Place the potato wedges in the air fryer basket and cook for 15-20 minutes, shaking the basket halfway through, until golden and crispy.
- While the potatoes are cooking, place the salmon patties in the air fryer and cook for 8-10 minutes, flipping halfway through, until cooked through and crispy.
- Serve the salmon patties with the crispy air fryer potatoes.
Notes
- Feel free to add herbs or spices to the salmon mixture for extra flavor.
- You can also bake the salmon patties in the oven at 375°F (190°C) for about 15-20 minutes if you don’t have an air fryer.
