Ingredients

  • 2 cups of corn kernels (fresh or frozen)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/2 cup crumbled feta cheese
  • 1 can black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 cup red onion, diced
  • 1 lime, juiced

Instructions

  1. In a skillet, heat olive oil over medium heat. Add corn and sauté for about 5 minutes until slightly charred.
  2. Stir in garlic powder, salt, and pepper. Remove from heat and set aside.
  3. In a large bowl, combine cherry tomatoes, basil, and feta cheese.
  4. In another bowl, mix black beans, cumin, chili powder, red onion, and lime juice.
  5. Combine the corn mixture with the tomato mixture and black bean mixture. Toss until well mixed.
  6. Serve immediately or chill for a refreshing side dish.
