- 2 cups of corn kernels (fresh or frozen)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/2 cup crumbled feta cheese
- 1 can black beans, rinsed and drained
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 cup red onion, diced
- 1 lime, juiced
Instructions
- In a skillet, heat olive oil over medium heat. Add corn and sauté for about 5 minutes until slightly charred.
- Stir in garlic powder, salt, and pepper. Remove from heat and set aside.
- In a large bowl, combine cherry tomatoes, basil, and feta cheese.
- In another bowl, mix black beans, cumin, chili powder, red onion, and lime juice.
- Combine the corn mixture with the tomato mixture and black bean mixture. Toss until well mixed.
- Serve immediately or chill for a refreshing side dish.
