A quick and delicious BBQ chicken salad topped with creamy ranch dressing and crispy tortilla strips, perfect for a light lunch or dinner.

- 2 cups cooked chicken, shredded or diced
- 1 cup BBQ sauce
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1/2 cup red onion, thinly sliced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup ranch dressing
- 1 cup tortilla strips
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked chicken and BBQ sauce. Mix well until the chicken is evenly coated.
- In another large bowl, combine the chopped romaine lettuce, cherry tomatoes, corn, red onion, and shredded cheese.
- Add the BBQ chicken mixture on top of the salad ingredients.
- Drizzle ranch dressing over the top and toss gently to combine all ingredients.
- Top the salad with crispy tortilla strips, and season with salt and pepper to taste.
