Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup BBQ sauce
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1/2 cup red onion, thinly sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup ranch dressing
  • 1 cup tortilla strips
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked chicken and BBQ sauce. Mix well until the chicken is evenly coated.
  2. In another large bowl, combine the chopped romaine lettuce, cherry tomatoes, corn, red onion, and shredded cheese.
