Ingredients

  • 4 cups fresh apricots, pitted and sliced
  • 1 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon almond extract (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced apricots, 1/2 cup of sugar, vanilla extract, cinnamon, and lemon juice. Toss to coat the apricots evenly and set aside.
  3. In another bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt.
  4. Stir in the milk and melted butter until just combined. If using, add almond extract.
  5. Pour the batter into a greased 9×13 inch baking dish. Spoon the apricot mixture evenly over the batter. Do not stir.
  6. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Let it cool slightly before serving warm. Enjoy!

Notes

  • Serve with vanilla ice cream or whipped cream for an extra treat.
  • You can substitute fresh apricots with canned apricots if fresh are unavailable, just drain them well.
  • Feel free to add other fruits like peaches or berries for a mixed fruit cobbler.
