Dutch Oven Chuck Roast Slow Cooked: 5 Steps to Comfort

  • Author: ushinzomr

Description

This Dutch oven chuck roast is slow-cooked to perfection, resulting in tender meat paired with baby potatoes and carrots, all smothered in a rich, flavorful gravy.

Ingredients

Scale
  • 34 lbs chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 lb baby potatoes, halved
  • 45 carrots, cut into large pieces
  • 2 tablespoons cornstarch (optional, for thickening gravy)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it in the hot oil for about 4-5 minutes on each side until browned. Remove the roast and set aside.
  3. In the same pot, add chopped onion and garlic, sautéing until fragrant and softened, about 3-4 minutes.
  4. Stir in beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary. Bring to a simmer.
  5. Return the chuck roast to the pot, then add baby potatoes and carrots around the meat.
  6. Cover the Dutch oven and transfer it to the preheated oven. Slow cook for 4-5 hours, or until the meat is fork-tender.
  7. If you prefer a thicker gravy, remove the roast and vegetables once cooked, and simmer the remaining liquid on the stove. Mix cornstarch with a little water to create a slurry, then stir it into the simmering liquid until thickened.
  8. Slice the chuck roast and serve with the baby potatoes, carrots, and rich gravy. Garnish with fresh parsley if desired.

Notes

  • For added flavor, consider marinating the chuck roast overnight.
  • Feel free to add other vegetables such as celery or parsnips.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
