  • 4 cups dandelion flowers (about 200 flowers, stems removed)
  • 4 cups water
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) fruit pectin (like Sure-Jell)
  • 5 cups granulated sugar

Instructions

  1. Gather fresh dandelion flowers, ensuring they are free from pesticides.
  2. In a large pot, combine the dandelion flowers and water. Bring to a boil and then simmer for 30 minutes.
  3. Strain the mixture through a fine mesh sieve or cheesecloth into a large bowl, discarding the solids. You should have about 4 cups of dandelion liquid.
  4. Stir in the lemon juice and fruit pectin into the dandelion liquid. Bring the mixture to a full rolling boil over medium heat.
  5. Add the granulated sugar all at once, stirring continuously. Bring back to a boil and boil for 1 minute.
  6. Remove from heat and skim off any foam if necessary.
  7. Pour the jelly into sterilized jars, leaving about 1/4 inch headspace. Wipe the rims of the jars with a clean cloth to remove any residue.
  8. Seal the jars with lids and process in a boiling water bath for 5-10 minutes to ensure preservation.
  9. Let the jars cool completely at room temperature. Once cool, store in a cool, dark place.

Notes

  • Make sure to use only dandelions that have not been treated with chemicals.
  • This jelly can be used on toast, as a filling for pastries, or even as a glaze for meats.
