A refreshing and hydrating drink perfect for hot summer days, combining the crispness of cucumber with the tartness of lemon.


Ingredients

  • 1 large cucumber, peeled and sliced
  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • Ice cubes
  • Lemon slices and cucumber slices for garnish

Instructions

  1. In a blender, combine the sliced cucumber and half of the cold water. Blend until smooth.
  2. Strain the cucumber mixture through a fine mesh sieve into a large pitcher, pressing to extract as much juice as possible.
  3. Add the fresh lemon juice and sugar to the cucumber juice. Stir until the sugar is completely dissolved.
  4. Pour in the remaining cold water and mix well. Adjust sweetness by adding more sugar or water as desired.
  5. Serve over ice and garnish with lemon and cucumber slices.

Notes

  • For a more intense cucumber flavor, let the mixture sit in the fridge for an hour before serving.
  • Add fresh mint leaves for an extra refreshing twist.
