Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced red onion
  • 1/2 cup crumbled bacon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large pot, bring salted water to a boil. Add the baby potatoes and cook until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly. Once cool enough to handle, place them on a baking sheet lined with parchment paper.
  4. Using the bottom of a glass or a potato masher, gently smash each potato until flattened but still in one piece.
  5. Drizzle olive oil over the smashed potatoes and season with salt and pepper. Bake in the preheated oven for 20-25 minutes or until crispy and golden.
  6. While the potatoes are baking, prepare the dressing. In a bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, and a pinch of salt and pepper.
  7. Once the potatoes are crispy, remove them from the oven and let them cool for a few minutes.
  8. In a large mixing bowl, combine the crispy potatoes, chopped chives, parsley, red onion, and bacon (if using).
  9. Drizzle the dressing over the potato mixture and gently toss to coat. Adjust seasoning if necessary.
  10. Serve warm or at room temperature.

Notes

  • For extra crispiness, you can broil the potatoes for an additional 2-3 minutes after baking.
