  • 1 medium Eggplant
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a large bowl, combine the eggplant slices, olive oil, salt, black pepper, garlic powder, and paprika. Toss until the eggplant is well coated.
  3. Arrange the eggplant slices in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer.
  4. Cook for 10 minutes, flipping halfway through, until the eggplant is golden brown and crispy.
