- 2 tablespoons Olive oil

- 1/4 cup Parmesan cheese
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a large bowl, combine the eggplant slices, olive oil, salt, black pepper, garlic powder, and paprika. Toss until the eggplant is well coated.
- Arrange the eggplant slices in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer.
- Cook for 10 minutes, flipping halfway through, until the eggplant is golden brown and crispy.
