Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1/2 cup all-purpose flour or gluten-free flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray
  • Sweet chili sauce for dipping

Instructions

  1. In a shallow bowl, combine the flour, garlic powder, paprika, salt, and pepper.
  2. In a separate bowl, beat the eggs.
  3. In another bowl, mix together the shredded coconut and panko breadcrumbs.
  4. Dredge each shrimp in the flour mixture, then dip into the beaten eggs, and finally coat in the coconut mixture, pressing gently to adhere.
  5. Preheat the air fryer to 400°F (200°C).
  6. Lightly spray the air fryer basket with cooking spray. Place the shrimp in a single layer in the basket, making sure they do not touch.
  7. Spray the tops of the shrimp lightly with cooking spray.
  8. Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  9. Serve immediately with sweet chili sauce for dipping.
