Description
This crispy air fryer coconut shrimp is perfectly golden brown and served with a sweet chili dipping sauce for a delicious appetizer or snack.

- 1 lb large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 1/2 cup all-purpose flour or gluten-free flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Cooking spray
- Sweet chili sauce for dipping
Instructions
- In a shallow bowl, combine the flour, garlic powder, paprika, salt, and pepper.
- In a separate bowl, beat the eggs.
- In another bowl, mix together the shredded coconut and panko breadcrumbs.
- Dredge each shrimp in the flour mixture, then dip into the beaten eggs, and finally coat in the coconut mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C).
- Lightly spray the air fryer basket with cooking spray. Place the shrimp in a single layer in the basket, making sure they do not touch.
- Spray the tops of the shrimp lightly with cooking spray.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with sweet chili sauce for dipping.
