- 2 chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bell peppers
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon fresh parsley
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Mix well.
- Coat the chicken breasts with the seasoning mixture, ensuring they are evenly covered.
- Place the seasoned chicken breasts in the air fryer basket and cook for 10-12 minutes, flipping halfway through, until the internal temperature reaches 165°F (75°C) and the outside is crispy.
- While the chicken cooks, toss the sliced bell peppers with a little olive oil, salt, and pepper.
- Grill the peppers in a grill pan over medium heat for about 5-7 minutes until tender and slightly charred.
- In a small bowl, mix mayonnaise with lemon juice to create the lemon aioli. Optionally stir in chopped parsley.
- Once the chicken is cooked, let it rest for a few minutes before slicing.
- Serve the sliced chicken breast with grilled peppers on the side and a dollop of lemon aioli.
Notes
- For extra flavor, marinate the chicken in the seasoning mixture for a few hours before cooking.
- Feel free to use any combination of bell peppers you prefer.
- The lemon aioli can be made ahead of time and stored in the refrigerator for up to a week.
