Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bell peppers
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh parsley

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Mix well.
  3. Coat the chicken breasts with the seasoning mixture, ensuring they are evenly covered.
  4. Place the seasoned chicken breasts in the air fryer basket and cook for 10-12 minutes, flipping halfway through, until the internal temperature reaches 165°F (75°C) and the outside is crispy.
  5. While the chicken cooks, toss the sliced bell peppers with a little olive oil, salt, and pepper.
  6. Grill the peppers in a grill pan over medium heat for about 5-7 minutes until tender and slightly charred.
  7. In a small bowl, mix mayonnaise with lemon juice to create the lemon aioli. Optionally stir in chopped parsley.
  8. Once the chicken is cooked, let it rest for a few minutes before slicing.
  9. Serve the sliced chicken breast with grilled peppers on the side and a dollop of lemon aioli.

Notes

  • For extra flavor, marinate the chicken in the seasoning mixture for a few hours before cooking.
  • Feel free to use any combination of bell peppers you prefer.
  • The lemon aioli can be made ahead of time and stored in the refrigerator for up to a week.
