Ingredients

  • 4 salmon fillets (about 6 oz each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh basil, chopped (for garnish)

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and cook for about 4-5 minutes on each side, or until cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the heavy cream and bring to a simmer. Add the Parmesan cheese, sun-dried tomatoes, spinach, and Italian seasoning. Stir until the spinach is wilted and the sauce is well combined.
  5. Return the salmon fillets to the skillet and coat them with the creamy sauce. Cook for an additional 2-3 minutes to heat through.
  6. Garnish with fresh basil before serving.

Notes

  • Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
  • For a lighter version, you can use half-and-half instead of heavy cream.
