- 4 salmon fillets (about 6 oz each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh basil, chopped (for garnish)
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and cook for about 4-5 minutes on each side, or until cooked through. Remove the salmon from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a simmer. Add the Parmesan cheese, sun-dried tomatoes, spinach, and Italian seasoning. Stir until the spinach is wilted and the sauce is well combined.
- Return the salmon fillets to the skillet and coat them with the creamy sauce. Cook for an additional 2-3 minutes to heat through.
- Garnish with fresh basil before serving.
Notes
- Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
- For a lighter version, you can use half-and-half instead of heavy cream.
