Ingredients

  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme (dried or fresh)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent.
  2. Add the sliced mushrooms and thyme, and cook until the mushrooms are browned and have released their moisture, about 5-7 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for 15 minutes.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, you can blend it in batches in a regular blender.
  5. Stir in the heavy cream and season with salt and pepper to taste. Heat the soup until warmed through.
  6. Serve hot, garnished with chopped parsley.
