- 1 pound fresh mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 tablespoons unsalted butter
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme (dried or fresh)
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent.
- Add the sliced mushrooms and thyme, and cook until the mushrooms are browned and have released their moisture, about 5-7 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and simmer for 15 minutes.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can blend it in batches in a regular blender.
- Stir in the heavy cream and season with salt and pepper to taste. Heat the soup until warmed through.
- Serve hot, garnished with chopped parsley.
Notes
- For a lighter version, you can substitute half-and-half for the heavy cream.
- Feel free to add other herbs like rosemary or sage for additional flavor.
