- 1 cup cooked, shredded chicken
- 1/2 cup cherry tomatoes, halved

- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the cooked rotini pasta, shredded chicken, cherry tomatoes, cucumber, and red onion.
- In a separate smaller bowl, mix together the mayonnaise, Greek yogurt, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the pasta and chicken mixture, and toss until everything is well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
