Ingredients

  • 4 cups fresh corn kernels (or frozen corn)
  • 1 medium onion, diced
  • 2 medium potatoes, peeled and diced
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
  3. Stir in the corn and heavy cream. Simmer for an additional 5-10 minutes until heated through.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with chopped chives or parsley.

Notes

  • For a thicker chowder, blend a portion of the soup and stir it back into the pot.
