A creamy and comforting corn chowder that’s perfect for chilly days.
Ingredients

- 4 cups fresh corn kernels (or frozen corn)
- 1 medium onion, diced
- 2 medium potatoes, peeled and diced
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Chopped chives or parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Stir in the corn and heavy cream. Simmer for an additional 5-10 minutes until heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped chives or parsley.
Notes
- For a thicker chowder, blend a portion of the soup and stir it back into the pot.
- You can add cooked bacon or ham for extra flavor.
