- 2 cups coconut milk
- 1/2 cup sweetened shredded coconut
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a blender, combine coconut milk, shredded coconut, honey (or maple syrup), vanilla extract, and salt.
- Blend until smooth and well combined.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks into the molds and freeze for at least 4-6 hours, or until solid.
- To remove the popsicles, run warm water over the outside of the molds for a few seconds.

Notes
- For a tropical twist, add pineapple or mango puree to the coconut mixture.
- You can substitute honey with agave syrup for a vegan option.
