A classic Cobb salad filled with fresh vegetables, protein, and a delicious dressing. Perfect for a light lunch or dinner.
Ingredients

- 4 cups mixed greens (such as romaine and arugula)
- 1 cup cooked chicken breast, diced
- 4 strips cooked bacon, crumbled
- 2 hard-boiled eggs, chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup blue cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup balsamic vinaigrette dressing
- Salt and pepper to taste
Instructions
- In a large salad bowl, layer the mixed greens on the bottom.
- Arrange the diced chicken, crumbled bacon, chopped eggs, diced avocado, halved cherry tomatoes, crumbled blue cheese, and sliced red onion on top of the greens.
- Drizzle the balsamic vinaigrette dressing over the salad.
- Season with salt and pepper to taste.
- Toss gently to combine before serving.
