- 2 pounds red potatoes, diced
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup celery, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 4 hard-boiled eggs, chopped
Instructions
- Place diced red potatoes in a large pot and cover with water. Bring to a boil and cook for 10-12 minutes or until fork-tender. Drain and let cool.
- In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix until smooth.
- Add cooled potatoes, celery, red onion, parsley, and hard-boiled eggs to the bowl. Gently fold the ingredients together until evenly coated with dressing.
- Cover and refrigerate for at least 1 hour before serving to let flavors meld.
- Serve chilled and enjoy!
Notes
- For an extra kick, add a dash of hot sauce or paprika to the dressing.
- This potato salad can be made a day ahead for convenience.
