Ingredients

  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 4 hard-boiled eggs, chopped

Instructions

  1. Place diced red potatoes in a large pot and cover with water. Bring to a boil and cook for 10-12 minutes or until fork-tender. Drain and let cool.
  2. In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix until smooth.
  3. Add cooled potatoes, celery, red onion, parsley, and hard-boiled eggs to the bowl. Gently fold the ingredients together until evenly coated with dressing.
  4. Cover and refrigerate for at least 1 hour before serving to let flavors meld.
