Ingredients

  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced
  • 4 hard-boiled eggs, chopped
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix well.
  3. Add the cooled potatoes, celery, red onion, and chopped eggs to the bowl. Gently fold the ingredients together until well combined.
