A delicious and creamy classic potato salad, perfect for picnics and barbecues.
Ingredients

- 2 pounds of potatoes, peeled and diced
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup celery, diced
- 1/2 cup red onion, diced
- 4 hard-boiled eggs, chopped
- 2 tablespoons fresh parsley, chopped
Instructions
- Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
- In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix well.
- Add the cooled potatoes, celery, red onion, and chopped eggs to the bowl. Gently fold the ingredients together until well combined.
- Taste and adjust seasoning if needed. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
- Garnish with fresh parsley before serving.
Notes
- You can add other ingredients like pickles or bell peppers for extra flavor.
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
