Description

A creamy and hearty clam chowder made with fresh clams, potatoes, and vegetables for a comforting bowl of goodness.


Ingredients

  • 4 slices of bacon, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups diced potatoes
  • 3 cups clam juice or seafood stock
  • 1 cup heavy cream
  • 2 cups chopped fresh clams (or canned clams, drained)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
  3. Stir in the diced potatoes and clam juice (or seafood stock), bringing it to a boil. Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
  4. Add the heavy cream, chopped clams, thyme, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
  5. Serve hot, garnished with crispy bacon and chopped parsley.
