- 4 slices of bacon, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups diced potatoes
- 3 cups clam juice or seafood stock
- 1 cup heavy cream
- 2 cups chopped fresh clams (or canned clams, drained)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, cook the diced bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the diced onion to the pot and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
- Stir in the diced potatoes and clam juice (or seafood stock), bringing it to a boil. Reduce heat and let it simmer until the potatoes are tender, about 15 minutes.
- Add the heavy cream, chopped clams, thyme, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
- Serve hot, garnished with crispy bacon and chopped parsley.
