This Cinnamon Roll Casserole is an easy, delicious breakfast dish that combines the classic flavors of cinnamon rolls with the convenience of a casserole. It’s perfect for brunches, holidays, or any special occasion!


Ingredients

  • 2 cans cinnamon rolls
  • 4 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13 inch baking dish.
  3. Open the cans of cinnamon rolls and cut each roll into quarters.
  4. Place the quartered cinnamon rolls in the prepared baking dish, spreading them out evenly.
  5. In a medium bowl, whisk together the eggs, milk, vanilla extract, and cinnamon (if using).
  6. Pour the egg mixture over the cinnamon roll pieces in the baking dish.
  7. Bake in the preheated oven for 25-30 minutes or until the casserole is set and golden brown on top.
  8. Remove from the oven and let cool for a few minutes.
  9. Drizzle with the icing from the cinnamon roll cans and sprinkle with powdered sugar before serving.

Notes

  • Feel free to add nuts or chocolate chips for extra flavor.
  • You can prepare this casserole the night before and refrigerate it. Just add a few extra minutes to the cooking time if baking from cold.
